Origin of the word “Matango” Did you know that in Cameroon, Matango is a well-known traditional wine produced from the sap of palm trees whose fruits are coconuts or palm nuts? Palm trees are a good natural resource for locals since they have many uses in diverse traditional households. Matango is served at very special occasions, and by sharing this unique wine, Cameroonians are saying, “Welcome; you are our esteemed guest, and we are honoured by your presence!"
Growing up in Africa, food and tradition were very important throughout Carine’s upbringing. She soon learned to use local produce and spices to create tasteful dishes. At age fourteen, she went to live in the South of France, and this experience opened up a whole new world of tastes and cultures, which she found so inspirational that she was soon creating fusion dishes from the two cultures.
Her next move was to the Perigord region, where she started exploring the world of Asian food with a friend who originated from Laos, along with a love of Bergerac wines and other sought-after delicatessen well known in the region.
Ireland was her next ‘port of call, and she fell in love with all the traditions and produce that this charming Celtic island had to offer. However, destiny was calling her, and not long after, she settled in London with her Swedish husband and daughters.
A number of travels and culinary experiences abroad later, she was able to develop a culinary experience calling for a mix of flavours from the world and celebrating the essences of the cities she has visited.
